5 Easy and Healthy Recipes for College Students

Being a university student, especially if you are away from home, also means always being on the lookout for recipes that are easy and above all affordable for your budget.
Almost the majority of university students tend to consume frozen and pre-packaged foods to save a few euros, but often also for the short time available to them.
However, there are many quick and easy recipe options that fit within a college student's budget and promote a healthy lifestyle.
Here are 5 easy and above all healthy recipes to include in your cookbook!
1. Burritos with Chicken and Avocado

Ingredients for 2 doses:
- 1 chicken breast
- 1 avocado
- 1 piadina
- 1 Philadelphia spoon
- fresh cilantro q.b.
- parsley q.b.
- salt q.b.
Method:
Cut the previously grilled chicken into small pieces. Do the same for the avocado and set them aside.
Start filling the wraps with the Philadelphia, the avocado cubes and the grilled chicken and finally sprinkle with parsley, coriander and a pinch of salt.
Wrap the wraps to create bundles and heat them in a pan.
2. Fall Cous Cous Salad

Ingredients:
- 1 cauliflower head
- 2 cabbage leaves
- 1 sweet potato
- 2 spoons of couscous
- 2 glasses of water
- lemon juice q.b.
- orange juice q.b.
- salt q.b.
- pepper q.b.
- extra virgin olive oil
Method:
Preheat the oven to 200 degrees.
Take a large baking sheet, line it with parchment paper and garnish with the chopped cauliflower and sweet potatoes. Sprinkle with a few drizzles of olive oil on top, plus a few pinches of salt. Use your hands to mix, making sure the vegetables are well coated.
Roast the vegetables until golden brown (mixing them halfway through cooking); this will take between 25-35 minutes, depending on the oven.
Meanwhile, pour the dry couscous into a pot of boiling water (equal in parts of water and couscous), cover with a lid and let the couscous rest intact for 5 minutes.
After this time, remove the lid and with a fork gently scrape the surface of the couscous, layer by layer, until you reach the base.
Take a bowl and add the cooked vegetables and couscous. Mix everything with a drizzle of olive oil.
3. Almond Pancakes

Ingredients:
per l'impasto
- 60ml almond milk
- 2 eggs
- 8gr baking powder
- 40gr almond flour
- 5gr salt
- 1 vanilla
seasonings
- Maple syrup q.b.
- blueberries q.b.
- yogurt q.b.
Method:
First, mix the wet ingredients together in one bowl and the dry ingredients in another.
Next, pour the wet ingredients into the bowl of dry ingredients and mix until combined.
Heat a non-stick pan over medium-low heat and brush it with a drizzle of olive oil or butter. Pour the batter into the pan and cook each pancake for 1-2 minutes per side. Almond flour pancakes darken faster than regular pancakes, so take a closer look. Reduce heat as needed so the outside doesn't burn before the middle has a chance to cook.
4. Cavolburger

Ingredients:
- 1 cauliflower
- 115gr flour
- 225ml water
- milk q.b.
- breadcrumbs
- mayo
- salad
- salt q.b.
- pepper q.b.
- olive oil q.b.
Method:
Remove the cauliflower leaves and place the root side down on a cutting board and cut off the ends of both sides. Cut the remaining cauliflower into three to four thick slices.
In a bowl add the flour, in another the breadcrumbs and in a third a little water.
Add the water and milk to the flour and whisk until it becomes a smooth batter.
First, dip a slice of cauliflower into the batter. Now pass it in the breadcrumbs, covering it evenly on all sides.
Add about 1 cm of oil to a skillet over high heat and cook the cauliflower slices for about 5 minutes on both sides, or until golden brown.
Start loading your burgers! Start with the lettuce, then top with your cauliflower burger. Then load up with toppings of your choice.
5. Choco Banana Porridge

Ingredients:
- 1 cup of rolled oats
- 3 tazze di latte / latte d'avena
- 1 banana
- gocce di cioccolato q.b.
- sesame seeds or chia seeds q.b.
- coconut flakes q.b.
Method:
First add the oat flakes with the milk to a saucepan and mix over medium heat until it reaches the desired consistency.
When the porridge is ready, turn off the heat and add the chocolate chips and stir until completely incorporated into the porridge.
At this point, pour everything into a bowl and decorate with the sliced banana, sesame or chia seeds, coconut flakes and other chocolate chips.
